The idea for this book has been bubbling along in my subconscious for ages. The more I talked to my friends and observed the world around me, the more aware I became of the often relentless pace at which many of us live our lives. It struck me that despite the widely-held premise that technology was going to free up more leisure time for us all, quite often just the opposite has happened, and I see so many people around me scrambling to keep up. Unfortunately when this occurs, one of the first things that can suffer is the quality and variety of the food that we eat. Preparing a meal becomes just another chore to fit into a day, so to save time we tend to cook the same old things, or pick up takeaway, as anything else is just too exhausting to contemplate.
As a cook, this breaks my heart, yet despite what I do, when the wheels feel as though they’re dropping off our daily life, I too fall into this pattern. Determined not to go down this path, over time I’ve found myself developing a cache of recipes that are not only easy to make, but also taste wonderful, for I just know that it’s possible to eat truly good food that doesn’t take eons to prepare (although it does need to be cooked with TLC.). This doesn’t mean that all the dishes in the book are quick to cook, or take next to no time to prepare, but they are simple, and they do taste delicious. Some really can be whipped up in a flash; others may require a little more effort, but can then be left to happily bubble away for a few hours with no other thought than giving them the occasional stir. Since writing the book, I’ve found myself referring again and again to the recipes in it. Some are already become favourites, and my manuscript is covered with bright pink stickers to highlight these, so that when both energy and creativity abandon me completely, I can just pull out a page and know there will be something good to eat on the table. I would love to think that you find yourself similarly marking recipes that appeal to you, and that they prove to be a helping hand to enjoying utterly delicious, simple food on a daily basis.

My darling mum gave me this recipe after she went to a cooking class given by Belinda Jeffery. She raved about this delicious (and easy) pilaf dish that I just HAD to try. “You can have it with everything” she said. That’s not a statement a busy working mum can ignore, so I duly accepted said recipe. From the moment I tried it, I (and my family) have been hooked. It’s fantastically light and flavoursome and true to word we’ve had it with everything from salmon to lamb. I would recommend using salt-reduced stock or even using half stock/half water, otherwise it can be a bit salt heavy. I highly recommend all of Belinda’s books but her new cookbook ‘Utterly Delicious Simple Food’ (Penguin/Lantern) is particularly excellent. Smart, honest home cooking at its best.

"Just wanted to share with you a wonderful dinner party for 10 people I had recently after purchasing your new book in October. I enjoyed the cooking class so much with you at the Peppertree Kitchen that I decided to hold a dinner party based on your new book and it was so fantastic.
We started with the sautéed haloumi with celery, apple, lemon and pine nut salad and then went to the goats cheese, herb and asparagus tarts (in a mini size), for mains I stayed with the classic roast as we had the pepper and spice sirloin with horseradish cream matched with Crunchy crushed potatoes and Agrodolce red cabbage, roast pumpkin and bacon salad (an absolute star when I put it on the table). Then of course we had the amazing Blueberry Fool for desert (I found that substituting the Greek yogurt was perfect). I teamed everything up with some lovely Australian wines and even selected a sticky to go with the Fool.
Even though I felt like it was a lot of running around to get the fresh ingredients I must say I have never had so many wonderful comments from my guests, even my teenagers. I had one guest a dear friend scraping the plate after the goats cheese tart and he announced at the end that he doesn't eat asparagus but it was just so delicious he couldn't resist after the first bite.
At the end of the night I shared your book with them and they realised that it was a special night for me to try out all those amazing dishes and apart from a little left over roast there was no leftovers! Which I might add was quite disappointing for my husband.
Comments on your book. One of the things I enjoyed the most in your book is the little explanations and introductions to your recipes in your relaxed Aussie style. It feels like you are actually in the kitchen with me which is just so lovely, every recipe has a story! Although my mother in law Lynne (who you also met at the cooking class) has all your books and is a very big fan this is my first and it is definitely bringing me a lot of enjoyment. I found the little sections that help you to plan ahead and prepare parts of the recipe ahead of time very helpful for the dinner party. The tips the substitute were also appreciated."
